The distinction worth holding is between generation on device, which voize describes, and on device redaction, which several vendors here publish: in the second case identifiers are stripped locally and the text still travels to a server to be written. Both are engineered rather than contractual protections and they answer different questions.
voize is deployed in German speaking markets under those regimes rather than under United States health privacy law, so a United States buyer is evaluating a product built for someone else's rules, and its oversight model is the most consequential gap on its record: nothing published describes what happens when the on device model mishears a care note. hellocare publishes no security attestation or trust centre.
